DSHS ESH Cook 1
Eastern State Hospital in Medical Lake, WA, is hiring a Cook 1. In this role the incumbent will participate in the preparation and cooking of food, providing therapeutic diets in a psychiatric hospital setting. Proper use of food equipment such as a grill, mixer, knives, steam kettles, ovens, steamers, horizontal mixing kettle, cook/chill tank etc.
Some of what you'll do:
- Preparation of and cooking food using grills, ovens, alto shams, steam kettle.
- Ensuring food is prepared per HACCP guidelines and dietary needs following recipes provided.
- Communicate with Cook 2 for any shortage or overages of prepared products.
- Batch cook to have minimal left-over cooked items. Perform IDDSI modifications.
- Perform production functions according to Computrition tallies and recipes.
- Utilize common kitchen chemicals for sanitation purposes.
- Operate and keep clean and sanitize all equipment and counters used. Inventory and maintain necessary supplies and goods for assigned meals.
- Assist Food Service workers on tray-line and as needed and for preparation of therapeutic dietary needs.
- Communicate with Food Service Workers about the proper serving sizes needed.
What we're looking for:
- Ability to demonstrate IDDSI modification.
- The ability to demonstrate principles, methods and procedures involved in large-scale food preparation and Cooking operation.
- Ability to demonstrate safe food handling practices, sanitation, and universal safety precautions.
- Ability to use kitchen utensils and knives.
- Ability to follow recipes.
- Ability to efficiently manage time.
- The ability to work in a fast-paced environment completing multiple tasks simultaneously.
- Knowledge of all hospital, state and federal regulatory standards, policies & procedures.
- Demonstrate the principles of universal precautions and infection control practices.
- Ability to work with difficult or angry patients in a therapeutic, non-threatening manner.
- Ability to work as a team member and to resolve personal conflicts in a calm, non-threatening manner.
- Must be able to communicate effectively with management, peers, patients, and the public as required to carry Out the assigned duties of the position.
- Demonstrate proficient operation of the following equipment: Computer, copy machine, grill, fryer, steamers, stack Ovens, combi ovens, horizontal mixing kettle, steam kettles & mixers etc.
